Another Day Off
I am so happy because I had a four day weekend because I didn't have school on Monday because it was a holiday. Today I don't have school because the weather is bad. We has hail so now the snow on the ground has a sheet of ice! So I'm having a lazy day in my room watching TV, and on the computer. I tried Oreos with peanut butter and it's really good, actually. Today at my school was supposed to be pajama day but maybe they will reschedule. I'm under a really cozy blanket and it's nice and warm in my room. Compared to outside! I am dreading going back to school tomorrow or Wednesday! :(

Red Velvet Cake Recipe
Red Velvet Cake:
2 1/2 cups (250 grams) sifted cake flour
1/2 teaspoon salt
2 tablespoons (15 grams) regular or Dutch-processed cocoa powder
1/2 cup (113 grams) unsaltedbutter, at room temperature
1 1/2 cups (300 grams) granulated white sugar
2 large eggs
1 teaspoon pure vanillaextract
1 cup (240 ml) buttermilk
2 tablespoons liquid red food coloring
1 teaspoon white distilled vinegar
1 teaspoon baking soda
Cream Cheese Frosting:
1 - 8 ounce (227 grams) cream cheese, room temperature
1 - 8 ounce (227 grams) tub of Mascarpone cheese, room temperature
1 teaspoon pure vanilla extract
1 cup (115 grams) confectioners' (icing or powdered) sugar, sifted
1 1/2 (360 ml) cups heavy whipping cream
Red Velvet Cake: Preheat oven to 350 degrees F (175 degrees C) and place rack in center of oven. Butter two - 9 inch (23 cm) roundcakepansand line the bottoms of the pans with parchment paper. Set aside.
In a mixing bowlsifttogether the flour, salt, and cocoa powder. Set aside.
In bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add the sugar and beat until light and fluffy (about 2-3 minutes). Add the eggs, one at a time, beating well after each addition. Scrape downthe sides of the bowl.Add the vanilla extract and beat until combined.
In a measuring cup whisk the buttermilk with the red food coloring. With the mixer on low speed, alternately add the flour mixture and buttermilk to the butter mixture, in three additions, beginning and ending with the flour.
In a small cup combine the vinegar andbakingsoda. Allow the mixture to fizz and then quickly fold into the cake batter.
Working quickly, divide the batter evenly between the two prepared pans and smooth the tops with an offset spatula or the back of a spoon.Bake in the preheated oven for approximately 25 - 30 minutes, or until atoothpickinserted in the center of the cakes comes out clean. Cool the cakes in their pans on a wire rack for 10 minutes. Place a wire rack on top of the cake pan and invert, lifting off the pan. Once the cakes have completely cooled, wrap in plastic and place the cake layers in the refrigerator for at least an hour (or overnight). (This is done to make filling and frosting the cakes easier.)
Cream Cheese Frosting:In the bowl of your electric mixer, or with a hand mixer, beat the cream cheese and mascarpone cheese until smooth. Add the vanilla andconfectionerssugarand beat until smooth. Using the whisk attachment, gradually add the heavy cream and whip until the frosting is thick enough to spread. Add more sugar or cream as needed to get the right consistency.
Assemble: With a serrated knife, cut each cake layer in half, horizontally. You will now have four cake layers. Place one of the cake layers, top of the cake facing down, onto your serving platter. Spread the cake layer with a layer of frosting. Place another layer of cake on top of the frosting and continue to frost and stack the cake layers. Frost the top and sides of the cake. Can garnish the cake with sweetened or unsweetened coconut.
Serves 10 - 12 people.

Real American Girl: The Story Behind American Girl
In 1984, educator, writer, and entrepreneur Pleasant T. Rowland was looking for dolls to give her nieces for Christmas. She found baby dolls (which emphasize mothering) and teenage or adult dolls (which emphasize future aspirations of an older age), but no dolls that realistically represented girls in an nine-to-twelve age range. This experience was coupled with a visit to Colonial Williamsburg, a place which Rowland felt personified the accessibility of living history and which inspired her to create a line of historical character dolls and books. In 1986 the first Pleasant Company catalogs debuted character dolls Samantha Parkington, Kirsten Larson, and Molly Mclntire. Offered for sale with these dolls were the first three stories of each character's six-book series, period outfits and accessories, and storage options. The dolls were designed by Götz, a German doll-maker. Since then, the company has added to and expanded its historical character line as well as ceasing production of some older characters. The company has branched out into other product lines, among them the American Girl magazine, written in fiction and non-fiction publications, a line of 18-inch 'American Girl of Today' dolls, and the 'Bitty Baby' and 'Bitty Twins' collections. Pleasant Company was sold to Mattel, Inc. in 1997, and the name of the company changed to American Girl.

H2o: Just Add Water
H2O: Just Add Water, also known as H2O, is an Australian TV Show for children, pre-teens and teenagers, that is filmed at Sea World and other locations on the Gold Coast. It has a worldwide audience of more than 250 million. The show's plot revolves around three teenage girls facing everyday teen problems but with an added twist: they're mermaids with powers over water. Emma Gilbert, Cleo Sertori and Rikki Chadwick are three sixteen-year-old teenage girls who find themselves stranded on the mysterious Mako Island. They eventually find themselves in a pool under a dormant volcano just as a full moon appears overhead, bathing the pool in light. The girls are rescued and return to "normal life", but soon discover their lives have become anything but normal: seconds after contact with water, they transform into mermaids with supernatural powers over water. The trio enlist the help of Cleo's friend Lewis McCartney, who discovers the secret behind their transformations.
Emma Gilbert (Claire Holt) was the school's best swimmer until she became a mermaid. She could be a bit bossy and controlling but is a true friend. Her mermaid powers allow her to freeze anything that contains water, and later to freeze without water.
Cleo Sertori (Phoebe Tonkin) is shy and awkward, but a loyal friend. Her mermaid power allows her to mold water into a different shapes.
Rikki Chadwick (Cariba Heine) isn't very outgoing and quite a rebel, but is always there for her friends. Her special power allows her to boil water and anything with water in it.
Lewis McCartney (Angus McLaren) is Cleo's best friend since they were five, and they later become a couple. He's very clever, and has always helped the girls with their transformation.
Zane Bennett (Burgess Abernethy) is the local bad boy. Spoiled, rich, but definitely good looking, he and the girls at first disliked each other. Later, he and Rikki became a couple. After he found Rikki was a mermaid, they broke up, but eventually got back together.
The theme song "No Ordinary Girl" is performed by Gwen Stefani in series one, by Kate Alexa in series two and by Indiana Evans in series three.
